Introduction
I get so much grief for this from my mates, but I genuinely believe it, this is the greatest meal in the world.
Ok, greatest is a stretch, but it’s the most underrated meal.
It’s minimal fuss, it’s high in protein, it’s high in fibre, it’s easy and you’ll almost always have these ingredients in the gaf.
It is perfect for breakfast, lunch or dinner, and it is just a banger to have as a staple in your week!
Ingredients
- 1/2 Tin of Beans
- 1-2 Eggs
- 2 Slices of Bread
- Salt
To Serve (Very Optional)
Hot Sauce, Cheese, Za’atar or any seasoning you like.
Steps
1. Get your beans on. Cook them according to the package instructions, or, how you like them. Personally, I cook them in a pot on the hob at a medium high heat (6-7/10) and let them cook until they are really thick, almost like refried beans. Not how everyone likes them now, so make them whatever way you like!
2. Get your eggs on. Again, cook them in whatever way you like. Poached, fried, scrambled, whatever. I personally like to get a hot pan on the hob (8-9/10 heat) and get the eggs cracked in once it’s heated. I let them fry for a minute, then add a teaspoon of water to the centre of the pan and cover the eggs with a lid for another minute or two. This way, you get to fry and steam the eggs at the same time, keeping that lovely fried texture at the bottom, but also making sure the top is relatively cooked through while keeping the yolk dippy! I also add a decent pinch of salt to the top of my eggs too.
3. Get your toast in the toaster, and don’t burn it…
4. Get a plate. Put your toast down, then your beans, then your eggs.
5. Optional, but you can finish with a bit of hot sauce on top, some seasoning you like or even, a bit of cheese if you are that way inclined!
